Monday night I surprised my dad with home made dinner. My mom was out of town so he was all on his own and I head to Denver in exactly a week, thought I'd do something nice for my pops.
May 1st marked the day I spread the word about my blog, the day that is exactly one week before I pull out of my driveway for Denver, and the day I decided to take my diet seriously... Because of the diet, I found a healthy meal to cook for my dad. My mom is out of town, and I move states away in one week, so I treated my dad!
This Honey Garlic Salmon recipe I found on Pinterest (DUH) was so delicious and so good for you!
Combine the honey, lemon/lime juice, garlic, salt, and pepper into a small bowl, Stir until the mixture is well combined. Put your salmon fillets in a ziplock bag and pour in the mixture you just made. Make sure the salmon gets evenly soaked with the mixture and let it sit in the bag for 15 minutes.
This is the perfect time to get other things you are adding put together. I made asparagus (fresh from my dads garden). I lined a baking pan with tin foil and put some olive oil in the pan. I rolled the asparagus in the oil and then squeezed some fresh lemon over it. I topped it off with some salt and fresh pepper. I preheat the over to 350 degrees and waited for that to heat.
Begin heating up a pan on the stove top at medium to medium/high heat and add some olive oil or coconut oil to the pan. Sprinkle in the chopped green onion and swirl around the pan making sure the oil is evenly spread throughout.
Once the oven is preheated put the asparagus in the over for 10-12minutes.
Place the salmon in the pan and cover the pan for 3 minutes. Remove the lid and let sit for another minute. Flip the salmon and repeat (3 minutes covered, 1 minute uncovered). This should cook the salmon fully depending on the thickness of the slabs you got. If you want to keep cooking that is your choice!
Ok, I know I cheat by using these, but this rice/quinoa bags are a god sent! Shout out to costco, if you are a member for sure try these out! If you are cooking a full meal, certain areas you may need to cut corners, and this is where I cut mine. You microwave these for 90 seconds and they are good to go!
This was the perfect, healthy, light dinner and it wasn't too tough to make either! Would highly recommend trying it out!!
