Like everyone else out there, I am constantly trying to be as healthy as I can. The problem for me is always TIME. I love to cook, but at the end of the day I have done so much and want a quick answer and to hit bed. These Skinny Bell Pepper Boats are the perfect solution, wether you are cooking for a family or meal prepping for yourself. The recipe took me about 20-25 minutes to make.
First things first, you will remove the core and seeds of the peppers and cut each pepper in half (as demonstrated in the photos above).
Set those aside on a lined baking sheet so they are ready to be stuffed!
Pre-heat your oven to 375 degrees.
Now, cook the turkey. This can be done in any preferred way. I, personally, cook mine over medium-high heat on the stove top. Pre-heat your pan and line with with a bit of non-stick cooking spray (I use an olive oil mister rather than store bought cooking spray). You will cook this around 15 minutes, until meat is no longer pink at all. Then, drain out the excess grease.
Then, combine your spices and your salsa in a medium-large mixing bowl.
Once combined well, add the cooked turkey meat to the mixture.
Stuff your peppers with your meat and spice mixture.
Once evenly distributed, add the shredded cheese to the top and bake them for 10-15 minutes. You can base the length off of how melted you want the cheese.
Once they are cooked to your liking, you can remove from the oven and eat them as they are (150 Calories for 2 pepper boats) or you can feel free to add any of your favorite toppings. I added avocado to mine and also recommend sour cream and/or additional cheese and salsa.
Side Note: If you do intend to use them for meal prep, I very much enjoy heating two in a microwave safe bowl, cutting them all up, and stirring it together (almost like a healthy burrito bowl).
